Ingredients

For the Chicken

  • Onion powder
  • Garlic powder
  • Black pepper
  • Smoked paprika
  • Jerk seasoning
  • Walkerswood green seasoning
  • Walkerswood mild jerk marinade
  • Red bell pepper chopped
  • Green bell pepper chopped
  • Minced garlic
  • Green onion chopped

For the Sauce

  • 1 cup pan juices from baked chicken
  • 1 tbsp jerk marinade
  • 1 tbsp green seasoning
  • 1 cup BBQ sauce
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • Salt & pepper to taste

Instructions

Season & Prep the Chicken

  • Add all your seasonings, peppers, garlic, and green onion directly to the chicken.
  • Massage everything really well so the flavor gets into every piece.
  • Cover and bake at 375°F for 1 to 1½ hours, until the chicken is fully cooked and tender.

Prepare the Sauce

  • Remove the chicken from the oven and drain the pan juices, saving about 1 cup.
  • In a pan, combine pan juices, jerk marinade, green seasoning, BBQ sauce, brown sugar, and honey
  • Let the sauce simmer until it thickens.
  • Taste and adjust with salt and pepper if needed - but go light, because the pan juices already bring a ton of flavor.

Sauce & Bake Again

  • Pour the sauce over the chicken and return it to the oven uncovered.
  • Bake for another 1 hour, allowing the sauce to caramelize and coat the wings beautifully.

Serve

  • Remove from the oven and let the chicken cool slightly before serving.
