Boil the pasta according to the package instructions until al dente. Drain and set aside.
Season the chicken or shrimp with jerk seasoning, salt, pepper, and smoked paprika . In a large skillet, heat olive oil over medium heat and cook the protein until fully cooked (about 5-7 minutes for chicken, 3-4 minutes for shrimp). Remove and set aside.
In the same skillet, add a bit more oil if needed, then sauté the bell peppers, onions, and garlic until softened and fragrant.
Add heavy cream to the skillet, bringing it to a simmer. Stir in the Parmesan cheese(Add cheese slowly), allowing it to melt and thicken the sauce.
Add Jerk Seasonings, Salt & Pepper Adjust the seasoning or more jerk seasoning if desired.
Return the cooked protein to the skillet, mixing it with the vegetables and sauce. Add the cooked pasta and toss until everything is well coated.
Garnish with scallions and parsley, if using, and enjoy hot!
