Ingredients

  • 8 ounces penne or your preferred pasta
  • 1 pound chicken or shrimp optional
  • 2-3 tbsp jerk seasoning adjust to taste
  • 1 green bell pepper sliced
  • 1 red bell pepper
  • 1 small onion thinly sliced
  • 3 cloves garlic minced
  • 1 1/2 Cups heavy cream
  • 2 cups Parmesan cheese
  • 2-3 scallions chopped (optional)
  • 2 tbsp olive oil
  • salt and pepper to taste
  • fresh parsley, for garnish optional

Instructions

  • Boil the pasta according to the package instructions until al dente. Drain and set aside.
  • Season the chicken or shrimp with jerk seasoning, salt, pepper, and smoked paprika . In a large skillet, heat olive oil over medium heat and cook the protein until fully cooked (about 5-7 minutes for chicken, 3-4 minutes for shrimp). Remove and set aside.
  • In the same skillet, add a bit more oil if needed, then sauté the bell peppers, onions, and garlic until softened and fragrant.
  • Add heavy cream to the skillet, bringing it to a simmer. Stir in the Parmesan cheese(Add cheese slowly), allowing it to melt and thicken the sauce.
  • Add Jerk Seasonings, Salt & Pepper Adjust the seasoning or more jerk seasoning if desired.
  • Return the cooked protein to the skillet, mixing it with the vegetables and sauce. Add the cooked pasta and toss until everything is well coated.
  • Garnish with scallions and parsley, if using, and enjoy hot!
