Instructions
Prep the Salmon
Slice each salmon fillet down the middle lengthwise to create a pocket, being careful not to cut all the way through.
Season both sides with salt, pepper, smoked paprika, garlic powder, and onion powder.
Make the Stuffing
In a bowl, mix together: cream cheese, spinach, mozzarella, parmesan, garlic, Cajun seasoning, crab meat (if using)
Stuff each salmon fillet generously with the mixture.
Make the Brown Sugar Bourbon Glaze
In a saucepan over medium heat, combine brown sugar, bourbon, butter, soy sauce, Dijon mustard, and garlic.
Simmer for about 5–7 minutes until slightly thickened and glossy.
Cook the Salmon
Heat olive oil in a skillet over medium-high heat.
Sear salmon for about 3–4 minutes per side until nicely browned brushing generously with the bourbon glaze while cooking.
Bake at 400°F for 5-10 minutes to complete cooking.
Finish & Serve
Drizzle extra glaze over the salmon and garnish with parsley if desired.
Serve with garlic mashed potatoes, roasted asparagus, Cajun rice, or mac & cheese
This gives sweet, smoky, buttery, creamy, and savory all in one bite.
