Brown Sugar Bourbon Stuffed Salmon

Ingredients

For the Salmon

  • 4 salmon fillets skin on or off
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp Kinders Woodfired Garlic Seasoning

For the Stuffing

  • 1/2 block cream cheese softened
  • 1/2 cup spinach chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1 tsp garlic minced
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp crushed red pepper flakes

Brown Sugar Bourbon Glaze

  • 1/3 cup brown sugar
  • 1/4 cup bourbon
  • 2 tbsp butter
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp minced garlic
  • Pinch of red pepper flakes optional

Instructions

Prep the Salmon

  • Slice each salmon fillet down the middle lengthwise to create a pocket, being careful not to cut all the way through.
  • Season both sides with salt, pepper, smoked paprika, garlic powder, and onion powder.

Make the Stuffing

  • In a bowl, mix together: cream cheese, spinach, mozzarella, parmesan, garlic, Cajun seasoning, crab meat (if using)
  • Stuff each salmon fillet generously with the mixture.

Make the Brown Sugar Bourbon Glaze

  • In a saucepan over medium heat, combine brown sugar, bourbon, butter, soy sauce, Dijon mustard, and garlic.
  • Simmer for about 5–7 minutes until slightly thickened and glossy.

Cook the Salmon

  • Heat olive oil in a skillet over medium-high heat.
  • Sear salmon for about 3–4 minutes per side until nicely browned brushing generously with the bourbon glaze while cooking.
  • Bake at 400°F for 5-10 minutes to complete cooking.

Finish & Serve

  • Drizzle extra glaze over the salmon and garnish with parsley if desired.
  • Serve with garlic mashed potatoes, roasted asparagus, Cajun rice, or mac & cheese
  • This gives sweet, smoky, buttery, creamy, and savory all in one bite.
